Caviar, It’s What’s For Brunch at Holiday House in Palm Springs

Updated: 4 days ago

By Lola Mangia

Okay, so caviar is officially the vibe right now. From popping up at weddings to TikTokers like Bethany Frankel (yep, RHONY queen) making caviar a thing for the masses, it’s clear—this salted roe is no longer just for the elite. Once a luxury food loved by ancient royalty, caviar is everywhere in 2025. Heck, it even got voted the Best New Trending Dish by Food & Wine in 2024. And where else would you expect to find the most iconic brunch spot to serve it up? Holiday House in Palm Springs, obviously.

A Luxury, but Make It Trendy

Caviar’s always been that fancy thing you hear about but never quite get. You know, the thing people buy when they're feeling extra or for major flex moments. But the SQUAD at Holiday House has flipped the script—caviar is now a whole brunch moment. Enter the Caviar Egg: a delicate poached egg, served in its shell, topped with a 5g dollop of black caviar, whipped crème fraîche, and a sprinkle of chives. It’s like they took luxury and made it brunch vibes.

Vibes at Holiday House: Nostalgic AF

Picture this: you're in the midcentury modern paradise that is Holiday House, which has been serving iconic vibes since 1951. The space, designed by architect Herbert W. Burns, is a total throwback—but with a trendy twist. You’re chilling in the lush courtyard, diving into that caviar egg, and suddenly you’re in this luxurious bubble. It's like being transported to another era, but cooler.

The caviar egg isn’t just a meal; it’s an experience. The salty caviar hits your taste buds, and the creamy, perfectly poached egg yolk mixes with the whipped crème fraîche. When you dip those crispy toast fingerlings into this decadent combo, it’s like a little party in your mouth, and everyone is invited.

Sikes, giving everything that sleek, aesthetic touch. And the communal garden? Perfect for peeping out the Palm Springs scene while you indulge in your luxe breakfast situation.
